Warning: achcharu is deliciously addictive. This traditional pickle draws upon Sri Lanka’s trading history and stars carrots, beans, green chilli, onion and peppers. Mustard, garlic and vinegar are combined to make a punchy pickling dressing, which can also be flavoured with cinnamon, cloves, peppercorns and other fragrant additions. Achcharu is a natural partner to curry and rice; the sweeter, vegetable-based Malay achcharu is often served alongside biryani. There are also fruit versions to try, made with mango, pineapple, ambarella and veralu.
