Street food doesn’t get much more moreish than kottu: a savoury Sri Lankan treat starring fried godamba rotis (delicious flat crispbreads). Each morning, a stock of rotis are fried and stacked, ready for serving; when orders come in, they’re then re-fried alongside an array of flavoursome extras and spices. Curry sauce with a potent chilli kick is a natural match to the salty dough treats. Many of the kottu chefs in the local markets like to serenade their dough – and its appreciative fans – as they work. Move aside, doughnuts.
