Sour fish curry
Naturally, fish and seafood plays a star role here on this Indian Ocean island’s food scene; fish ambul thiyal (sour curry) is undeniably one of the finest examples. This dry-curry dish gets its distinctive zingy sourness from dried goraka: a small, citrusy fruit that tenderises meat and fish. Different kinds of fish can be used, though the dish is particularly tasty with tuna. Cubed pieces of fish are sautéed with black pepper, cinnamon, turmeric, garlic, pandan and curry leaves, plus other fragrant components.
